mog risotto

We joke with our teenage daughter about her texting habits.  We say: LOL!  OMG!  WTF! It bugs her, but that’s the whole idea.

Our six year old has picked up on this funny modern language.  But instead of OMG, he says MOG. I think that stands for My Oh God.

This is MOG Risotto.  I made waaaaay too much, and forgot, as usual, that risotto expands three fold once it starts greedily soaking up the chicken broth and wine.  You are welcome to come over and finish off the pot for me.  Maybe not.  That’s sort of creepy and I’m going to get in trouble from my Internet security husband for even saying that.

Jamie Oliver’s basic risotto recipe, which I’ve made dozens of times.  Don’t let Jamie fool you – you have to add about 2 litres of chicken stock and stir for an hour until it suddenly breaks and becomes creamy.

Add to the risotto when close to done:

  • 5 slices of bacon, chopped (add this when done browning onions)
  • 2 Tablespoons mushed up fennel seeds, 1/2 teaspoon red pepper flakes and pepper
  • 1/2 log goat cheese
  • 1/4 cup grated Parmesan
  • long strips of sliced salami
  • handful of chopped fresh oregano
  • handful of grated Parmesan on top
