spinach couscous and chicken and pepper skewers

Stringing a bunch of raw chicken on a skewer is not my idea of fun.  But I did it anyhow.

The new Real Simple magazine has some great summer recipes.  I borrowed their chicken skewer idea, but added red and orange peppers and mushrooms and Mike slathered the skewers in barbecue sauce when they were cooking.

The Spinach Couscous came from them too.  I love pine nuts.  I love garlic.  I love spinach.  Hard to go wrong there.  It was a great side to any barbecued meat.

Spinach Couscous
-from Real Simple

1 box couscous
2 Tablespoons olive oil
3 garlic cloves, sliced thinly
1/4 cup pine nuts
juice of one lemon
1/2 cup crumbled feta
1/2 bag of prewashed spinach
salt and pepper
handful of fresh mint, chopped

Cook couscous according to the package directions.

In a fry pan, heat up olive oil and brown garlic and pine nuts.  Add cooked couscous and fold in lemon juice, feta and spinach.  Season with salt and pepper.  Garnish with fresh mint.
