orzo with cannelli beans and goat cheese

I’ve been at a conference for three days, and eating Shaw Conference Centre food for lunch and reception hors d’oeuvres for dinner.   Despite what you might think, the tabouli salad today at lunch was quite exceptional.

But is nice to get back for a home cooked meal.  Mike and the kids have eating hot dogs and hamburgers, so a meal of lamb chops and orzo with cannelli beans and goat cheese was a nice comforting change.  (I did not make the mushroom sauce for the chops, but did use the rosemary garlic rub).

The orzo dish went like so:

Orzo with Cannelli Beans and Goat Cheese

1 cup cooked orzo
1 can drained and rinsed cannelli (white kidney) beans
1/2 cup chopped red onion
1/2 cup crumbled goat cheese
1/4 cup chopped fresh Italian parsley

1/4 cup olive oil
juice of two lemons
7 garlic cloves, minced
salt and pepper to taste

Cook the orzo until just done.  Drain and cool.

In a medium bowl, mix the olive oil, lemon juice, garlic, salt and pepper.  Add the beans, orzo, red onion, goat cheese and parsley.  Mix and serve warm or cold.

    HI! Where do you find the cannelli beans in this city – I haven’t been able to find them – even at the Italian Centre….and do you know where to find “cranberry” beans?
    Looks YUMMY!!!!

    Hi Valerie – here’s what I have discovered: cannellini bean = white kidney bean = fazolia bean

    I found white kidney beans at Sunterra (in a can)…I believe that’s a more common name here!

    I do not know about cranberry beans…anyone?
