mom potato salad

Potato salad recipes are like chili recipes:  everybody has their favourite family version, which must not be deviated from and are a version of what they ate as a child.  Some people put dill in it, others vinegar, and yet others, relish.  Crazy.  What do you put in your potato salad?

My mom’s potato salad was mayo based, with eggs and green onion.  I made a few very slight adjustments.  The final product is pictured above and was served tonight with barbecued pork ribs and sliced red peppers.   Yes, I’m pretending it is the middle of summer, even though it is only +6 degrees.  

Mom Potato Salad

8 medium red potatoes, quartered
2 eggs
1 cup of mayonnaise
1/4 cup dijon mustard
juice of half a lemon
1/2 cup chopped red onion
1/4 cup chopped fresh chives
salt and pepper

 Place potatoes in a saucepan of cold salted water.  Bring to a boil and let boil for 15 minutes.  Drain well.  In the meantime, hard boil the eggs.  Peel the eggs and dice.

In a medium bowl, combine mayo, mustard and lemon juice.   Add potatoes while they are still hot.  Carefully still in the eggs, red onion and chives, season with salt and pepper, and cover and chill in fridge until ready to serve.

    I hated my mom’s potato salad…. But I love my mother-in-law’s!!! And yours is just like hers. No dill. Love it.
