risotto cakes

risottoI had leftover goat cheese risotto.  So I formed them into patties, dredged them in an egg wash and then a bread crumb and cornmeal coating. 

Fried them up in a pan, and voila:  risotto cakes.

I have not been inspired to make very creative dinners.  This week we ate spaghetti bolognaise and chicken enchiladas.  Tonight there is some fresh farmer’s market pasta and pre-stuffed salmon from Safeway’s. 

I wonder if feeling inspired as an amateur cook is a cyclical thing?  Some weeks bite, while others rock.  Such is life.

    I am totally out of my creative cooking groove as well all of a sudden. I think it is time for spring to arrive and perk us all back up.
