i am a rum ball

December 12, 2008

So I had this great idea that I’d make homemade gifts for our neighbours, and for people who give us gifts unexpectedly and I’d normally be totally unprepared with a reciprocal gift, but this year I’d be all like:  I have something for you!  And then I’d pull a ziplock container full of rum balls out of the freezer.

Pretty smart, huh?

This recipe made 24 rum balls, which fit into two small round ziplock containers.  So this works for two sets of neighbours/unexpected gifters.

Rum Balls

1/2 cup chocolate chips
200 grams of vanilla wafers
2 cups ground pecans
4 Tablespoons condensed milk
1/3 cup dark rum
1 tsp vanilla
1 cup icing sugar

Melt the chocolate chips in saucepan over simmering water.  Take off the heat and let cool.

Throw the vanilla wafers in a blender and blend until they turn into crumbs.  Put in a bowl.  Add the pecans, condensed milk, rum, vanilla and cooled chocolate.  Stick your hands in the bowl and mash everything together until it forms one big ball.

Cover and put in fridge for 30 minutes.

Then take them out and roll into balls.  Roll in icing sugar and pack into containers.

Next up for homemade gift item – almond roca.

I made a double batch of your rum balls. I added a little extra rum just for good measure. They’re gooood.

I’m so glad they turned out and that you like them…that makes me happy!
