peanut butter cup ice cream

This summer, I had a list of things I wanted to do with my kids.   It looked like this at the end of the summer. 

1.  make homemade popsicles
2.  make homemade ice cream
3.  blow bubbles
4.  fill up backyard pool
5.  play on the slip and slide
6.  go to the outdoor splash park
7.  paint toenails – Ella and Sue
8.  hide from the heat on a movie day
9.  have a greasy KFC chicken picnic at Whitemud Park
10. go to Fort Edmonton Park
11. take the street car over the High Level Bridge
12.  Have gelati at Leva at 10:30 in the morning. 

Now, I don’t have an excuse for not going to Fort Edmonton, but I did try to purchase an ice cream maker in mid-August.  By then it was too late.  I was told all the ice cream makers were sold out in the city because there had been some sort of ice cream maker factory shut-down because of the Bejing Olympics.  Apparently the ice cream maker factory was spewing too much pollution into the air.  Once the Olympics left town, the factory caught up on their orders and I found my ice cream maker.

Now I am the proud owner of a Cuisinart (polluting) ice cream maker.  So after school, Ella made ice cream.  She made it with whipping cream, so it is very decadent, rich and yummy.  And because this girl knows how to live, she put in extra peanut butter cups.  But this caused the ice cream maker to start overflowing and oozing, so she had to scoop it all out and mix it by hand.  No matter. It still tastes so good.

Peanut Butter Ice Cream

1 1/8 cups peanut butter (full fat, not natural)
3/4 cups sugar
1 1/4 cups whole milk
2 cups whipping cream
1 1/2 tsp vanilla
1 1/2 cups chopped peanut butter cups

Use a hand mixer to mix the peanut butter and sugar together until smooth.  Add the milk and mix on low for 2 minutes.  Stir in the whipping cream and vanilla.  Pour into ice cream maker.  Mix 25 minutes, then add the peanut butter cups on the top for another five minutes.

    wow, peanut butter! my favourite! Then ice cream. This is heavenly. I am going to ask my girlfriend to make this 🙂 great recipe!
