chicken with creamy spinach

Another Popeye dinner.  It looks gross.  But it tasted good.  The recipe is from Real Simple.   We also ate couscous salad and these hashbrowns, which were made from leftover potatoes from Ikea meatballs and potatoes yesterday.

Chicken with Creamy Spinach

2 tablespoons olive oil
8 chicken thighs 
salt and pepper
4 green onions, thinly sliced
1/2 cup dry white wine
1/2 cup sour cream
2 bunches spinach, thick stems removed (about 8 cups)

Heat the oil in a large skillet. Season the chicken with salt and pepper.  Babysit the chicken and cook until browned and cooked through, 8 to 10 minutes per side.  It makes a mess and splatters everywhere.  Be wary. Transfer to plates.

Spoon off and discard all but 1 tablespoon of the fat and return the skillet to medium heat. Add the green onions and cook, stirring, until they begin to soften.

Stir in the wine and sour cream. Add the spinach, salt, pepper. Cook, tossing gently, until the spinach begins to wilt. Serve with the chicken.
