cheese and shrimp quesadillas

We have quesadillas about once a month.  They are my Spanish version of grilled cheese.  The kids can mix and match their fillings, and everybody is happy.

Today I prepped and arranged the following stuffings:

  • cheddar and monterey jack cheese, shredded
  • chipotle pepper pureed with diced red onion (I should have added some tomato sauce.  It was REALLY hot)
  • red pepper strips
  • mushrooms
  • shrimp
  • diced chicken (I cooked an extra chicken breast when I did the curry last night)
  • chopped cilantro
  • sour cream
  • salsa
  • I would have had avocado, but it was either sold out, or hard as rocks in both grocery stores today.  The avocado wasn’t meant to be. 

Ella had a chicken, cheese and red pepper quesadilla.   Aaron had a plain cheese one with loads of sour cream.  Mike had a chicken, cilantro, red onion and cheese one.  And I had a shrimp, mushroom, chipotle pepper, cilantro, and cheese one. 

We didn’t have our regular black bean and corn salad with it, but I see this recipe is making its rounds around the blog-o-sphere.  It is a winner.
