devilled eggs, circa 1974

Boiled eggs are hard to peel.  I used to work as a Nursing Aide many years ago, when I was going to university.  If the patients got hard boiled eggs for breakfast, once I was done attempting to peel them, there would be chunks of white missing, and pieces of shell in their meal.

Not much has changed.  We had a deli dinner tonight, consisting of salami, proscuitto, cambozola cheese, and ciabatta bread.  And devilled eggs, just for Mike, who loves devilled eggs.  I think they give him a flashback to his youth.

I had duck eggs from Green Eggs and Ham.  Man, they were hard to peel.  I even Googled how to peel hard boiled eggs and tried the various techniques – banging either end of the egg, cracking it all over…nothing worked well. 

But here’s my recipe for mangled devilled eggs:  peel and slice eggs in half horizontally.  Scoop out yolks.  Mix in mayonnaise, dijon mustard, salt, pepper, paprika and chopped chives.  Plop yolks back into the eggs, covering up as much mangle as possible.  Eat quickly.
