chicken and sausage cacciatore and organic noodles

Bon Appetit does not let me down. 

This chicken and sausage cacciatore is made with chicken thighs and Italian sausage and grape tomatoes.  It is brilliant, and best of all, it uses cans of nothing…only fresh ingredients.  Well, I did purchase the noodles in a package, but I bought organic ones to alleviate my consumer guilt.

This was a good thing to serve on a rainy day.  And I didn’t have to turn on the oven. 

Chicken and Sausage Cacciatore and Organic Noodles

olive oil
salt and pepper
8 organic or free-range chicken thighs
4 mild or hot Italian sausage
two handfuls fresh mushrooms, quartered (I substituted chopped red onions for the mushroom haters in this house)
2 baskets grape tomatoes
1 cup red wine
3 large garlic cloves, minced
1 1/2 tsp fresh chopped rosemary
1/2 cup fresh basil, chopped coarsely

Heat oil, season the chicken, and brown chicken and sausage in batches.  About five minutes on each side.  Put aside on a plate.  Brown red onions/mushrooms. 

Drain fry pan, but keep good brown bits in.  Add another bit of olive oil.  Add tomatoes, garlic, red wine and rosemary.  Cover and cook for 5 minutes.  Then squish about half the tomatoes with a potato masher (careful, they splatter).  Put chicken back in.  Simmer uncovered for 5 minutes.

Add the sausage and mushrooms/onion.  Cook on medium for 15 more minutes.  Fish out sausage and cut into chunks.  Add chicken to a plate.  Mix in basil and salt and pepper into sauce and spoon over chicken.  Serve with noodles and/or bread with homemade garlic butter.
