black bean and corn salad

We had chicken and shrimp quesadillas tonight. The chicken and shrimp fillings were mashed in with monterey jack cheese and chipotle peppers in adobe sauce. A fruit salsa accompanied it, along with this salad.
This is another version from the trusty Best of Bridge.
Black Bean and Corn Salad
1/4 cup olive oil
4 tbsp cumin
salt and pepper
juice of one lime
zest of one lime
Mix all these dressing ingredients together.
Then add:
1 can black beans, rinsed and drained
1 red pepper, chopped
1/2 cup chopped cilantro
1 cup corn (I used fresh, left over from last night and scraped off the cob. It was SO MUCH better than canned corn)
