homemade lemonade, bison burgers, couscous salad

I have to post another entry to move that disgusting picture of our Cold Lake breakfast down the screen.

It is hot.  I am not complaining.  I’m just sayin’.  And we don’t have air conditioning in our house.  So everything must be barbecued.  That is my rule when it is over +30. 

Last night, we had bison burgers on cheese buns with garlic aioli (all from Sunterra), and couscous salad.  My kids love couscous for some weird reason.  Isaac can eat an entire box of it in one sitting.  And Aaron and I made homemade lemonade, squeezing eight lemons and getting lemon juice in our eyes.  It was fun and sticky.  A few minutes after making it, the pitcher was empty.  Having three kids means never having food or drink in the house very long…

Couscous Salad
(this too, from my friend Maureen.  She rocks!)
1 box couscous, prepared with chicken stock and olive oil
5 little tomatoes, quartered, salted, drained
1/4 red onion, chopped
a big chunk of feta, chopped up

dressing
1/2 cup olive oil
1 lemon zest and juice
salt and pepper
oregano

Mix everything together.  Serve cold

Homemade Lemonade

1 cup of sugar, dissolved in 1 cup of water in saucepan on stove
8 lemons, squeezed
Combine and fill pitcher up with cold water.  It will be consumed very quickly.
