potato salad with smoked salmon
I loved this potato salad. Usually I hate potato salad because it is a mushy mix of overcooked potatoes and mayonnaise. The dressing coats the potatoes beautifully. I substituted goat cheese for Jamie’s creme fraiche and added some red onion for crunch.
I was the only person who ate this in our house. Mike will protest that he took TWO SERVINGS, but the servings were 1/8 of a potato each, so I call bullshit and say that doesn’t count.
I fear that you cannot take the English out of that boy. Although Jamie Oliver doesn’t have that excuse, does he? Sigh.
Potato Salad With Smoked Salmon And Horseradish Goat Cheese
-adapted from Jamie Oliver’s Home cookbook
New (baby) Potatoes
zest 1 lemon
juice 1/2 lemon
About 1 tbs capers
salt and pepper
Extra Virgin Olive Oil
a handful dill ripped and chopped up.
red wine vinegar
Bring a large pot of salted water to the boil. Add potatoes and cook until tender.
Drain and immediately add lemon zest, juice, capers, salt and pepper. Add olive oil and red wine vinegar in a ratio of 3 parts oil to 1 part vinegar. Toss well and leave to cool.
Smoked salmon
fresh dill
Red onion – chopped up
goat cheese
horseradish
juice 1/2 lemon
salt
Place the smoked salmon on a large plate.
Mix together the goat cheese, horse radish, lemon juice and salt.
Add the onion to the potato salad and place in the middle of the plate. Put dobs of the goat cheese dressing over the potatoes, drizzle olive oil, scatter some dill and serve.
